Save this post! If you’re into gardening (or have gone a bit rogue at the farmers market), it can be a bit intimidating to use up all your fresh produce... but have you thought of preserving it? There are so many ways to avoid food waste and have a taste of summer for months to come. Small batch preserving is so satisfying AND delicious. Plus, your Nanna would be proud! 

Here’s some ideas…

🍓 Freeze it: Great for berries, green beans, mangoes + stone fruit. Blanch vegetables first before freezing. For fruit, wash and cut up. Freeze in a single layer on a tray and then move into a freezer-safe container or ziplock bag
 
🍒 Jam: Jam is my jam - ahem - my favourite way to preserve in summer. Think berries, stone fruit, figs, onions, tomatoes. Jam is the most versatile in my opinion, and can be sweet or savoury! 

🍋 Curd: Fruit curd is a creamy spread made with fruit, eggs and butter that lasts 1-2 in the fridge. Try it with citrus, passionfruit, berries, mango, rhubarb or pineapple.

🌽 Relish + Chutney: So good with cheese or on sandwiches. Try onion, corn, tomato, eggplant or unexpected combinations like nectarine + chilli

🥒 Pickles: Try pickling zucchini, cucumber, chillies, onion, beetroot, carrots, radish, even watermelon! The list goes on and on!

🍑 Shrubs: GREAT for preserving fruit that may already be overripe. Try cherries, berries, peaches, apricots, plums and your favourite vinegar! Serve with soda or in cocktails.

🍅 Sauce: Make a huge batch of tomato sauce, or the eggplant pasta sauce I just shared on the blog. You can also freeze the cooked sauce for future busy days! 

🌶 Fermenting: This is an area I’m still learning about because it’s so good for your health! The options are endless but I want to try a homemade fermented chilli hot sauce!

Peach Crumble Cake 🍑 Just popping in with a little weekend baking inspo. I make this cake over and over, adapting it with different fruit depending on what's in season. But I gotta say, this peach version is just perfection.

Still looking for a NYE cocktail? This 🍉Watermelon Paloma 🍉 ticks all the boxes. It's refreshing and fruity with a hint of bitterness from the Aperol and a little chilli kick!

Here's how to make it... SAVE this post to come back to the recipe.

🍉 Flaky salt and chilli flakes
🍉 90 ml Silver or Blanco Tequila
🍉 50 ml Aperol
🍉 100 ml fresh ruby grapefruit juice
🍉 100 ml fresh watermelon juice
🍉 30 ml fresh lime juice
🍉 Dash of soda or ginger beer
🍉 Ice cubes, plus extra to serve
🍉 Extra watermelon, for garnish

Pour a generous amount of flaky salt and chilli flakes onto a small plate and stir to combine. Line the rims of two glasses with lime juice and gently dip the rims into the salt/chilli mixture.

Combine the silver tequila, Aperol, grapefruit juice, watermelon juice and lime juice in a cocktail shaker. Add ice and shake vigorously for 10 seconds.

Add extra ice to your serving glasses and using a strainer, pour the cocktail evenly between the glasses. Top up with a dash of soda or ginger beer and garnish with a thin slice of watermelon.
