Apple Pie Pimm's

Apple Pie Pimm's is a nice way to bridge the seasons. Pimm's paired with apple juice, cider and cinnamon syrup makes it feel cozy, perfect for cooler days.

  • 60 ml Pimms
  • 60 ml cloudy apple juice
  • 30 ml cinnamon simple syrup (see below)
  • 15 ml lemon juice, freshly squeezed
  • Dry apple cider, sparkling or ginger ale,┬áto top up
  • Apple slices, to garnish
  • Cinnamon stick, to garnish

Cinnamon Simple Syrup

  • 1/2 cup caster sugar
  • 1/2 cup water
  • 2 cinnamon sticks


  1. To make the simple syrup, combine ingredients in a small saucepan over medium heat. Stir until sugar is dissolved and bring to the boil. Allow to boil for a few minutes until slightly syrupy. Remove from the heat and allow to cool. Remove the cinnamon sticks before using. Can be stored in the fridge indefinitely.
  2. To make the cocktail, combine Pimms, apple juice, cinnamon simple syrup, lemon juice and ice in a  cocktail shaker. Shake for 20 seconds, strain into a serving glass with more ice. Top up with apple cider and garnish with apple slices and a cinnamon stick.
