To make the chia pudding, in a bowl or jar, mix together the coconut & almond milk, chia seeds, rice malt syrup and vanilla extract. Set aside for 15 minutes, stir again and refrigerated for a few hours or overnight. When pudding has thickened, stir in the acai powder.

To make the smoothie, combine the frozen blueberries, banana, protein powder (if using), almond butter, acai powder and coconut & almond milk in your NutriBullet or high-powered blender. Blend well until fully combined.

To assemble the parfait, layer the chia pudding in glasses or jars and spoon the blueberry acai smoothie over the top. Top with your favourite fruit and toppings such as berries, kiwi fruit, papaya, buckinis, granola, coconut, edible flowers etc.

I used fresh blueberries, sliced banana, strawberries, coconut flakes and fresh mint leaves for mine.
