
Last Christmas, I fell deeply in love with making rocky road. It has to be one of the easiest, most festive and fun homemade treats ever, and it’s always so delicious. I included a couple of versions in my Homemade Christmas ebook (on sale now!!) but honestly, once I started, I just couldn’t stop. I even kept a Note on my phone to brainstorm every flavour combination I could think of. I’ve basically been counting down the months until I could share the next one. And so, today we have my Caramel Apple Rocky Road!
It’s a super satisfying, slightly grown-up flavour that any die-hard Caramilk fans will love. You already know I’m a big fan of homemade Christmas gifts, and Rocky Road is one of the best options. Easy to make, endlessly customisable and guaranteed to impress. My favourite thing is personalising it to my family and friends’ favourite flavours. And on that note, my Mum would love this one!

What’s in my Caramel Apple Rocky Road
When I create a rocky road recipe, I always try to include a balance of flavours, textures and colours – something chewy, crunchy, creamy and of course, something pretty!
Caramilk chocolate – If you’re in Australia, you’ll know the magic of Cadbury Caramilk! It’s a caramelised white chocolate that is creamy and sweet with a caramel toffee undertone and golden colour. Other brands like Whittakers and even Aldi make great versions too. Can’t find it? White chocolate will still work beautifully.
Dried apples – The star ingredient! They bring that signature apple flavour and a lovely chewy texture! I forgot how good they were and literally couldn’t stop snacking on the extras while I made this.

Biscoff biscuits – For crunch and a touch of warm spice that just tastes like Christmas. They pair perfectly with the caramelised chocolate and chewy apple, and their golden colour adds some contrast.
Marshmallows – A classic rocky road must-have!! They bring that soft, pillowy texture that ties everything together. I used all white marshmallows in this version to match the cozy, neutral colour palette I was building here.
Slivered almonds – Their light crunch and gentle nuttiness balance out all the sweetness. Also because they’re small, you get a little hit in almost every bite. I loved it!

Once you’ve gathered all your ingredients, making this Caramel Apple Rocky Road couldn’t be simpler! Slowly melt the chocolate in a microwave or over a double boiler and stir in the vegetable oil. This helps it to slice up neatly and have a great texture, even straight from the fridge.
Then just mix everything together until all the pieces are fully coated, pour into a loaf tin lined with non-stick baking paper and decorate the top. Refrigerate for a couple of hours or until fully set.
I’ll be honest – I can’t cut in a straight line to save my life, so I usually rope my sister into slicing it for me. But that first glimpse of the cross-section? Always my favourite part. This one isn’t the most colourful rocky road I’ve made, but the subtle golden tones feel perfectly festive – you can’t tell me it’s not on theme!

The beauty of rocky road is how easy it is to customise. Add some jersey caramels, fudge or chewy toffee lollies for a more decadent touch. If you can’t find Biscoff, gingerbread or another caramel cookie would work perfectly too. That’s the best part about making your own Christmas treats – you get to be creative, adapt them to your taste, and make something truly personal and memorable for the people you love.

Caramel Apple Rocky Road
Make this Caramel Apple Rocky Road for an easy, festive homemade Christmas treat! Sweet, chewy, and full of flavour with Caramilk chocolate, dried apples, slivered almonds, marshmallows and Biscoff biscuits.
Ingredients
- 315 g Caramilk chocolate
- 1 tsp vegetable oil
- 80 g Biscoff biscuits (about 10) roughly chopped
- 70 g dried apple slices, roughly chopped
- 60 g white marshmallows, cut up if large
- 25 g slivered almonds
To decorate
- 2-3 dried apple slices, extra
- 1-2 Biscoff biscuits, extra
- 30 g white chocolate, to drizzle
Instructions
- Line a loaf tin with non-stick baking paper. I used a 24 x 13 x 6.5 cm tin.
In a small bowl, melt the Caramilk chocolate carefully, either using the microwave in 20-30 second increments, stirring between each, or over a double boiler. Stir in the vegetable oil. Set aside for now.
- In a large bowl, place the chopped Biscoff biscuits, dried apple pieces, marshmallows and slivered almonds. Pour the melted chocolate over the top and mix well to ensure everything is completely coated.
- Spoon mixture into the prepared loaf tin and spread out into an even layer, making sure to get right into the corners. Decorate the top with some pieces of Biscoff and dried apple slices.
- Refrigerate for 3-4 hours or overnight, until set. Melt the white chocolate and drizzle over the top. Return to the fridge for 20-30 minutes.
Ensure the Rocky Road is completely set before lifting out of the loaf tin and cutting into 6 large pieces or 12 smaller ones. Store in the fridge.
